FRUITY

Fruity is a core category in the inner ring of the Specialty Coffee Association Flavor Wheel. It represents fruit-like aromas and flavors—ranging from fresh and juicy to tart or dried.

These notes reflect variety, ripeness, and processing, and are a key indicator of complexity and quality.

In tasting, start from Fruity and move outward to refine into Berry, Dried Fruit, Other Fruit or Citrus Fruit—each capturing a different expression of fruit character.

Subtle distinction matters:
Citrus is bright and acidic, Berry is sweet-tart, while Dried Fruit is heavier and more concentrated.

This is a simplified interpretation based on materials from the Specialty Coffee Association (SCA) and World Coffee Research (WCR).

BERRY

Berry focuses on rich, sweet-tart berry notes that are often found in East African coffees or lighter roasts. These flavors feel fresh and vibrant:

Blackberry: Slightly tart, deeply sweet, with a wild, forest-like character.

Raspberry: Bright acidity, lightly sweet, clean and refreshing.

Blueberry: Juicy, subtly sweet, with a refined, elegant aroma.

Strawberry: Gently sweet, lightly aromatic, easy to recognize.

DRIED FRUIT

Dried Fruit describes deep, slightly fermented sweetness that tends to be warmer and heavier than fresh fruit notes. Common in naturally processed coffees or medium-dark roasts.

Raisin: Brown sugar-like sweetness, light caramel, with a subtle hint of alcohol.

Prune: Richly sweet with mild tartness, reminiscent of dried plum preserves.

OTHER FRUIT

Other Fruit is a diverse group used to describe fruit flavors outside of berry, citrus, or dried fruit categories, often adding depth and surprise to the coffee experience.

Coconut: Light creaminess, gentle sweetness, slightly creamy mouthfeel.

Cherry: Bright sweet-tart, fresh ripe fruit aroma.

Pomegranate: Sharp tartness with light sweetness, characteristic pomegranate aroma.

Pineapple: Tropical sweet-tart, with a distinct, sharp aroma.

Grape: Juicy, lightly wine-like, refreshing sweetness.

Apple: Lightly tart-sweet, crisp, clean.

Peach: Soft, gentle sweetness with a subtle stone-fruit aroma.

Pear: Delicate, mild fruitiness with gentle sweetness.

CITRUS FRUIT

Citrus Fruit highlights bright, fresh acidity reminiscent of citrus fruits, often making the cup lively and refreshing.

Grapefruit: Slightly bitter-sour, with a distinctive aroma.

Orange: Balanced sweet-tart, fresh orange scent.

Lemon: Bright, clean, sharply defined acidity.

Lime: More intense acidity, strong aroma, with subtle, refined sweetness.
